From the “It’s Been Quite a While” Dept:

It’s been a very long time since I dusted off a particular recipe that comes to me from my Aunt Judy…her lemon velvet cake.

I honestly can’t remember the last time I’d made it but it’s easily got to be 15 years or more.

It’s not that I don’t like this cake…it’s easily my favourite by far.

And it’s not particularly hard to make once you get past making some rookie mistakes on the first attempt such as running the oven 25 degF hotter than I should have with that dark Bundt pan (but to be fair, I’d never used that pan either so it didn’t even register until the first attempt came out a bit more well done than intended).

Once I got past the mistakes that my lovely sister branded as “AMATEUR!”, the second attempt was the lemon cake that has often gotten rave reviews.

In this particular case, even from lovely neighbours who shouldn’t be eating it at all because it has gluten and the other one who is not a big fan of lemon! 🙂

Let’s just say that the one that went next door for the party came back as crumbs on the plate!
